I estimate that it would take somewhere between 50 and 100 Viltrumites to eliminate the Saiyans with these three specific strategies. If we equalize the numbers on both sides, something like 20,000 Saiyans and 20,000 Viltrumites, Saiyans would have to be quick to intercept even a single Viltrumite unit.
