Builder is more relaxed and focused on exploring and building. Less zombies, more loot, and you can hit more than one zombie at a time. Survivor is classic survival mode. Standard zombies, normal loot, and can only hit one zombie at a time. Apocalypse, I haven't played as much of, but it's harder survival mode.
